Pina Colada Sauce

  • Yield: Makes 4


  • 1 cup cream of coconut, preferably Coco Lopez
  • 3/4 cup store-bought or fresh pineapple juice
  • 1/4 cup coconut liquor
  • 1/4 cup white rum
  • Zest of 1 lime
  • 3 tablespoons freshly squeezed lime juice


  1. Just before serving, combine all ingredients in a glass measuring cup. Using an immersion blender, blend until combined.
