Tomato Water

  • Yield: Makes 2 cups

  • 8 plum tomatoes, coarsely chopped
  • 1 teaspoon coarse salt


  1. In the bowl of a food processor, combine tomatoes and salt. Puree until smooth. Strain through into a damp cheesecloth-lined sieve set over a bowl. Let drain for 30 minutes; discard solids.
