- Yield: Makes 2 cups

- 8 plum tomatoes, coarsely chopped
- 1 teaspoon coarse salt
In the bowl of a food processor, combine tomatoes and salt. Puree until smooth. Strain through into a damp cheesecloth-lined sieve set over a bowl. Let drain for 30 minutes; discard solids.
