Aioli in a Pinch

  • Yield: Makes About 1/2 Cup
Aioli in a Pinch


  • 1 large clove garlic, or 2 small cloves
  • 1 pinch of sea salt
  • 1 large egg yolk
  • About 1/2 cup mild olive oil


  1. Cut garlic into a few pieces, and pound them in a mortar. Add the salt, and mash to a paste. Add the egg yolk, and stir with the pestle to combine. Still using the pestle, work in the oil, a few drops at first, gradually increasing the flow as the yolk becomes tacky and opaque.
