Begin the meal with rye soda bread; orange marmalade; a rich Irish butter; smoked trout; farmhouse cheeses, such as Irish cheddar and Cashel Blue; and watercress salad.
We used a mix of white and purple potatoes, but any small ones will work. Don’t rush to clear away the first course when you serve the sausages and egg bake -- everything is delicious together.
