Sweet Potato Mash
We love Jewel and Garnet sweet potatoes for their earthy, pumpkinlike quality.

- 5 pounds sweet potatoes
- Extra-virgin olive oil
- 4 tablespoons melted unsalted butter
- 1/4 teaspoon freshly grated nutmeg
- Kosher salt and freshly ground pepper
Using a fork, pierce sweet potatoes all over. Rub with oil; roast at 375 degrees until very soft, 1 to 1 1/2 hours. When they're cool enough to handle, halve and scoop flesh into a bowl. Mash with butter, nutmeg, and salt and pepper.
