Shake this up for a salad dressing you will have for several days.

- 1/2 cup extra-virgin olive oil
- 4 tablespoons apple cider vinegar
- 2 tablespoons maple syrup
- 6 teaspoons Dijon mustard
- Dash of salt and pepper
Mix all ingredients.
