Orange-Herb Butter

This lively compound butter is a perfect way to add a bit of brightness to grilled fish.

  • 1 stick unsalted butter, room temperature
  • 1/2 tablespoon grated orange zest
  • 2 teaspoons fresh orange juice
  • 1/4 teaspoon cayenne pepper
  • 1 clove garlic, minced
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon coarse salt


  1. Mash together butter, orange zest, orange juice, cayenne pepper, garlic, cilantro, and salt.
