Chickpea and Parsley Mash
This delicious mash can be served with crostini, crackers, or crudites.

- 1 can (15.5 ounces) chickpeas
- 3 tablespoons extra-virgin olive oil
- 1/4 cup chopped fresh parsley
- 1 tablespoon red-wine vinegar
- Coarse salt and ground pepper, for seasoning
In a bowl, combine chickpeas, rinsed, drained, and mashed, extra-virgin olive oil, fresh parsley, and red-wine vinegar. Season with coarse salt and ground pepper.
