Chickpea and Parsley Mash

This delicious mash can be served with crostini, crackers, or crudites.

  • 1 can (15.5 ounces) chickpeas
  • 3 tablespoons extra-virgin olive oil
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon red-wine vinegar
  • Coarse salt and ground pepper, for seasoning


  1. In a bowl, combine chickpeas, rinsed, drained, and mashed, extra-virgin olive oil, fresh parsley, and red-wine vinegar. Season with coarse salt and ground pepper.
