Steamed Cauliflower Puree
It's easy to punch up the gentle flavor of cauliflower with assertive ingredients. Our puree uses a generous amount of garlic.

- 1 recipe Steamed Cauliflower
- 1/2 cup half-and-half
- 2 garlic cloves, smashed
- 2 tablespoons butter
- Coarse salt and ground pepper
While cauliflower is steaming, bring half-and-half, garlic, and butter to a boil in a small saucepan over high heat. Remove from heat; let steep 10 minutes.
Discard garlic. In a food processor, blend cauliflower and half-and-half mixture until creamy. Season with salt and pepper.
