Light Mocha

On a chilly morning, enjoy a steamy cup of this guilt-free coffee drink.

  • 1/3 cup unsweetened cocoa powder
  • 2 tablespoons instant espresso powder (or coffee)
  • 1/4 teaspoon salt
  • 1 1/2 cups low-fat milk
  • 4 to 5 tablespoons sugar


  1. In a medium saucepan, combine unsweetened cocoa powder, instant espresso powder (or coffee), and salt. Starting very gradually (adding 1 tablespoon at a time), vigorously whisk in 2 cups water until very smooth; whisk in 1 1/2 cups low-fat milk.

  2. Bring to a simmer over medium heat. Stir in sugar until dissolved. If desired, strain through a fine-mesh sieve before serving.

Cook's Notes

Instead of using sugar, you can make the drink with your favorite sweetener (add to taste).
