Turkey Pita with Avocado and Sprouts

This is a California-inspired rendition of the classic turkey sandwich.

Ingredients

  • 1 pita bread (6-inch)
  • 2 tablespoons grainy mustard
  • 4 arugula leaves (well washed)
  • 2 slices (2 ounces) thinly sliced cooked turkey
  • 1/4 cup alfalfa sprouts
  • 1/4 sliced avocado

Directions

  1. Halve pita bread crosswise. Spread a total of 1 tablespoon mustard over inside of both halves; dividing evenly, fill halves with arugula, turkey, alfalfa sprouts, and avocado.
