Prickly Pear Aguas Frescas

Sweet prickly pear refreshments are regionally appropriate eye-openers.

  • 4 prickly pears, peeled
  • 1/4 cup sugar
  • Juice of 2 limes, plus slices for garnish
  • 1/4 teaspoon ground canela (Mexican cinnamon) or regular cinnamon
  • 2 cups ice


  1. Puree pears in a blender. Pass through a fine sieve. Puree pear liquid, sugar, lime juice, canela, and ice in blender 1 minute. Pour into glasses; garnish with limes.

Cook's Notes

Prickly pear flesh can stain; wear disposable gloves when working with them.
