Originally devised by the Tuscans as a way to use stale bread, bruschette (the plural word for these toasts) can be served with a sprinkle of salt, or they can support a range of ingredients.

- 1 loaf rustic Italian bread, cut into 1/2-inch-thick slices (about 24)
- 4 garlic cloves, halved
- Extra-virgin olive oil
- Coarse salt
Heat a grill or preheat the broiler. Lightly char bread slices on grill or under broiler, turning slices halfway through. Rub bread slices with cut sides of garlic cloves, then drizzle with olive oil, and sprinkle with salt.
