Orange Vinaigrette for Beet Salad
Use this recipe when making our Beet and Mache Salad with Aged Goat Cheese.

- 1 tablespoon orange zest
- 3/4 cup orange juice
- 2 tablespoons sherry vinegar
- 1/2 teaspoon coarse salt
- 1/2 cup extra-virgin olive oil
- Freshly ground pepper
Stir together orange zest, orange juice, sherry vinegar, and coarse salt. Pour in olive oil in a slow, steady stream, whisking until emulsified. Season with freshly ground pepper.
