Orange Vinaigrette for Beet Salad

Use this recipe when making our Beet and Mache Salad with Aged Goat Cheese.

Ingredients

  • 1 tablespoon orange zest
  • 3/4 cup orange juice
  • 2 tablespoons sherry vinegar
  • 1/2 teaspoon coarse salt
  • 1/2 cup extra-virgin olive oil
  • Freshly ground pepper

Directions

  1. Stir together orange zest, orange juice, sherry vinegar, and coarse salt. Pour in olive oil in a slow, steady stream, whisking until emulsified. Season with freshly ground pepper.
