Couscous with Coriander and Scallions

Thin slices of scallions perk up this side and add a contrasting texture to a satisfying bowl of couscous. Bonus: this only take 5 minutes to prepare and 5 minutes to cook!

  • Coarse salt and ground pepper
  • 1 cup couscous
  • 1/2 teaspoon ground coriander
  • 3 scallions, thinly sliced on the diagonal
  • 1 tablespoon olive oil


  1. In a medium saucepan, bring 1 cup salted water to a boil. Remove from heat, stir in couscous, coriander, and scallions. Cover; let stand until liquid is absorbed, about 5 minutes. Add oil, season with pepper, and fluff with a fork to combine.
