Citrus Jellies

Jiggly fruit jellies makes everyone smile.

  • 2 cups orange or grapefruit (pink or red) juice
  • 2 envelopes (1/4 ounce each) unflavored gelatin
  • 1/2 cup sugar


  1. Place 1/2 cup juice in a small bowl; sprinkle with gelatin. Set aside to soften, 5 to 10 minutes.

  2. Meanwhile, in a medium saucepan, combine sugar and remaining 1 1/2 cups juice. Bring to a boil, stirring to dissolve sugar. Remove from heat; add softened gelatin mixture, and stir until dissolved. Pour into an 8-inch square baking pan. Chill, covered with plastic wrap, until firm, at least 1 hour and up to 5 days.

  3. To serve, run a paring knife around edge of pan to loosen jelly, and invert onto a cutting board. Cut into 16 squares, or as desired.
