Celery and Endive Salad

  • 2 tablespoons white-wine vinegar
  • 2 tablespoons olive oil
  • 3 celery stalks, thinly sliced
  • 2 heads Belgian endive, halved lengthwise and thinly sliced
  • 1/4 medium red onion, thinly sliced
  • Coarse salt and ground pepper


  1. In a medium bowl, whisk together vinegar and oil. Add celery, endive, and onion; season with salt and pepper, and toss.
