Use this recipe when making our Cucumber and Tomato Salad with Tahini Dressing.
- Yield: Makes 1 1/2 cups

- 1/2 cup tahini (well stirred)
- 1/2 cup fresh lemon juice
- 1/2 cup cold water
- 1/4 teaspoon chopped garlic
- 1/2 teaspoon coarse salt
- 1/8 teaspoon ground pepper
Combine all ingredients in a blender; blend on high speed until smooth. Refrigerate in an airtight container up to 5 days.
