Light Coleslaw

This lighter cole slaw is flavored with cilantro for a summery flavor.

Ingredients

  • 1/4 cup reduced-fat mayonnaise
  • 2 tablespoons white-wine vinegar
  • 2 teaspoons sugar
  • 1/2 teaspoon coarse salt
  • 1/8 teaspoon ground pepper
  • 1/2 small red cabbage
  • 2 tablespoons chopped fresh cilantro

Directions

  1. In a large bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.

  2. Add cabbage, cored and thinly sliced; toss to coat with dressing. Refrigerate, covered, for at least 1 hour and up to overnight.

  3. Just before serving, stir in cilantro; sprinkle with pepper, if desired.

Cook's Notes

REMOVING THE CORE With a sharp knife, cut cabbage through the core into quarters. Slice off thick white core from each quarter and discard.
