Caramelized Pears for Olive Oil Cake
This recipe goes with our Olive Oil Cake with Vanilla Yogurt.
- Yield: Enough for one 8-inch cake

- 1/4 cup granulated cane sugar
- 1/2 cup apple cider
- 3 Bosc pears, quartered and cored
Warm sugar and 1 tablespoon water in a large skillet over medium-high heat. Once sugar begins to caramelize, add cider, swirling to combine, and then add pears, cut side down. Cook over medium-low heat, turning occasionally, until tender and golden, 30 to 40 minutes, adding water 1 tablespoon at a time when pan looks dry.
