Chocolate Filling for Sandwich Cookies
Bittersweet chocolate gives this cookie filling a deeper, richer flavor.

- 3 sticks unsalted butter, softened
- 3 cups confectioners' sugar, sifted
- 3/4 teaspoon pure vanilla extract
- 1/4 teaspoon coarse salt
- 6 ounces bittersweet chocolate (70%), melted and cooled
In the bowl of an electric mixer fitted with the paddle attachment, combine the butter, sugar, vanilla, and salt. Begin beating on low speed, increasing to high for 2 minutes, scraping down the sides of the bowl occasionally. Stir in melted chocolate to combine.
