Zahtar is a Middle Eastern spice mixture that adds flavor with little fat or oils. It includes sumac, a red berry that is part of the wild-pistachio family and is ground into a powder.

- 1/2 cup dried savory or thyme (1 ounce)
- 1/4 cup sumac (3/4 ounce)
- 1/2 teaspoon coarse salt
- 1 tablespoon sesame seeds, lightly toasted (1/4 ounce)
Combine all ingredients in a medium bowl. In batches, grind in a spice mill until fine.
