Tamarillo Brulee with Whipped Creme Fraiche

This sweet and tangy fruit, also called a tree tomato, is cut in halves and roasted to intensify its flavor.

  • 1 pint creme fraiche
  • 1/4 cup confectioners' sugar
  • 1/4 teaspoon ground ginger
  • 6 ripe tamarillos
  • 1/4 cup granulated sugar


  1. Set oven to broil, and adjust rack to four inches below broiler element.

  2. Combine creme fraiche, confectioners sugar, and ginger in bowl of an electric mixer; whisk until thick and fluffy. Set aside.

  3. Slice tamarillos in half lengthwise; arrange, cut side up, on baking tray. Sprinkle granulated sugar over tamarillos, creating even coating. Broil until sugar bubbles and starts to caramelize, about 5 minutes. Serve immediately with dollop of whipped creme fraiche.
