Horseradish-Pimiento Cheese

Horseradish adds a spicy, modern twist to this southern staple.

Ingredients

  • 2 cups shredded sharp cheddar
  • 1/3 cup chopped pimiento
  • 1/2 cup mayonnaise
  • 2 tablespoons horseradish
  • 2 tablespoons thinly sliced scallion
  • Crackers, for serving

Directions

  1. Stir together cheddar, pimiento, mayonnaise, horseradish, and sliced scallion. Serve with crackers.
