White Glaze

Use a pastry brush to coat just-fried fritters, plump with apple filling, with this.

  • Yield: Makes 3/4 cup

  • 1 1/4 cups confectioners' sugar
  • 1/2 cup heavy cream
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon salt


  1. Combine sugar, cream, vanilla extract, and salt in a heatproof bowl or the top of a double boiler. Place over a pan of simmering water. Heat, stirring, until just warm, 2 to 3 minutes. Use while still warm.
