Ina's Cornbread

  • Yield: Makes one 10-by-7-inch bread

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup buttermilk
  • 3 tablespoons milk
  • 1 large egg
  • 1 1/2 cups sifted all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup yellow cornmeal
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Directions

  1. Heat oven to 325 degrees.

  2. Melt butter. Combine with buttermilk, milk, and egg. Sift together dry ingredients; add to buttermilk mixture and stir until just blended. Pour into buttered 10-by-7-inch dish.

  3. Bake for 35 to 45 minutes, until firm and golden.
