Simmered Plantains

Cousins of the yellow dessert banana, plantains are eaten cooked, like potatoes.

  1. Cut 10 plantains into 3-inch sections. Place in a large pot, cover with water, and bring to a boil. Reduce heat; simmer until plantains are tender and skins begin to split, about 20 minutes. Drain and serve.
