Pickled Red Onions

  • Yield: Makes 1/2 cup

  • 1 small red onion (about 4 ounces), sliced crosswise as thinly as possible
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 tablespoon chopped cilantro leaves


  1. Toss together onion and lemon juice in a small bowl and let marinate at room temperature for 20 to 30 minutes. Drain onions in a colander. Return to bowl and toss with salt, pepper, and cilantro.
