Basic Roasted Garlic

Roasting garlic reduces the odor and potency, while maintaining a vibrant flavor.

  • 1 head garlic
  • 2 teaspoons olive oil
  • Coarse salt and freshly ground pepper


  1. Heat oven to 375 degrees. Cut the garlic in half crosswise. Place each half, cut-side up, on a piece of aluminum foil. Drizzle each with oil, and sprinkle with salt and pepper. Wrap garlic, completely encasing it in the foil. Bake 45 minutes, until cloves are very soft, and serve.
