French-Style Hot Chocolate
Although it's commonly made with cocoa powder (chocolate liquor that has been pressed and ground), this classic French-style hot chocolate is richer -- a luxurious blend of bittersweet and semisweet chocolate, hot milk, cream, and a smattering of brown sugar.

- 5 ounces bittersweet chocolate (preferably 70 percent cacao), chopped
- 4 ounces semisweet chocolate (preferably 55 percent cacao), chopped
- 4 cups milk
- 1 cup heavy cream
- 2 tablespoons packed light-brown sugar, plus more to taste
- Pinch of salt
Heat all ingredients in a large saucepan over medium heat, whisking, until chocolate has melted and mixture is hot. Stir in more sugar, if desired.
