Royal Icing for Snow-Capped Fruitcake

Use this for our Snow-Capped Fruitcake.

  • Yield: Makes about 2 1/2 cups

  • 5 tablespoons meringue powder
  • 1 pound confectioners' sugar


  1. Put meringue powder, sugar, and 1/3 cup water into the bowl of a mixer fitted with the paddle attachment; mix on low speed until combined, about 7 minutes.
