  • 2 cups lentils
  • Dried bouquet garni
  • 1 teaspoon coarse salt
  • 1/2 teaspoon freshly ground pepper


  1. Bring lentils, 3 cups water, bouquet garni, salt, and pepper to a boil in a medium saucepan. Reduce heat to medium-low. Simmer until lentils are tender; begin checking after 20 minutes (cooking time will vary). Discard bouquet garni.
