Iced Green Tea With Cucumber
The nuanced flavor of green tea is best served simply chilled rather than with ice.
- Yield: Makes about 1 1/2 cups

- 1 1/2 cups boiling water
- 4 teaspoons loose green tea (or 4 tea bags)
- 2 tablespoons borage
- 5 slices (1/4 inch each) peeled cucumber
- Borage and unpeeled cucumber slices, for garnish
Pour water over tea and borage. Steep for 3 minutes. Strain. Add peeled cucumber slices, and refrigerate. Remove cucumber, and add garnish.
