We love this vegetarian dinner for so many reasons: It has layers of flavor, provides plenty of protein, and comes together quickly -- oh, and it tastes great. Bulgur wheat is quite wonderful, with a light, nutty flavor. Don't save it for tabbouleh, use your bulgur!

Hearty not heavy, this super soup uses two pantry staples you likely already have on hand: canned beans and chicken broth. (Also know that this is a great make-ahead recipe that will keep up to three days in the refrigerator.)

FRIDAY: Spaghetti with Shrimp and Olives

Shrimp might seem light and summery, especially when paired with cherry tomatoes. But when you add rosemary, capers, and olives to the mix, prepare for a hearty and totally delicious dish. Bonus points: This entree will be on the table in just 20 minutes.

SATURDAY: Soup au Pistou

Our take on this classic Provencal vegetable soup isn't hard to make and takes less than an hour. It uses a Parmesan rind and anchovy fillets for depth. The ingredients are simmered in chicken broth, and pistou, the French version of pesto, is stirred in right before serving. A baguette is the de rigeur accompaniment.

SUNDAY: Braised Pork with Cabbage and Apples

Sometimes we roast and sometimes we braise; today it's the latter. As the pork is braised on the stove top and finished in the oven, the kitchen is filled with savory smells. And because we like to try something different, we give the classic fall meal of pork with apples and cabbage an update with fresh fennel and aromatic caraway.
