Fava Beans Over Chicken

  • 1 sliced leek
  • Butter
  • 1 cup blanched, peeled fava beans
  • 1/4 cup chicken stock
  • 2 tablespoons heavy cream
  • Lemon juice
  • Salt and pepper
  • Poached chicken


  1. Saute leek in butter. Add fava beans and chicken stock. Simmer for 1 minute. Stir in heavy cream. Simmer for 2 minutes. Season with lemon juice, salt, and pepper. Serve on chicken.
