Small Potatoes Steamed in Butter

This dish can be a course on its own or an accompaniment.

  • 4 tablespoons (1/2 stick) unsalted butter
  • 2 pounds assorted fingerlings and new potatoes, scrubbed
  • Salt and freshly ground pepper
  • Handful of chopped fresh herbs, such as parsley, chives, tarragon, or chervil


  1. Melt butter in a medium saucepan over low heat. Add potatoes, stir well, and cover tightly. Cook, shaking pan occasionally, until potatoes are tender, about 7 to 12 minutes. Season lightly with salt, pepper, and fresh herbs, and serve immediately.
