Roasted Chicken Breast

  • Servings: 1


  • 1 bone-in, skin-on chicken breast half, about 10 ounces
  • Coarse salt and freshly ground black pepper


  1. Preheat oven to 375 degrees.

  2. Season chicken with salt and pepper. Transfer to a baking sheet fitted with a wire rack and cook until an instant-read thermometer inserted into the thickest part, without touching the bone, reads 165 degrees, 30 to 35 minutes.

  3. Transfer to a cutting board and rest, covered with foil, for 15 minutes before slicing.

    Something so simple and so good. You only need wait 15 minutes out of the oven to cut for sandwiches, etc.

    This roast chicken breast is so simple, but is such a big thing. I now use this for adding to "chicken and noodles" instead of boiled chicken. What a difference! Any time if need cooked chicken, this is it.... chicken salad, chicken sandwich, soup, etc. Thought I was the only one who could tell the difference, but friends wanted to know what my recipe was. If your recipe calls for cooked chicken, try this.
