Roasted Acorn Squash

  • 1 acorn squash, seeded and cut into 1 1/2-inch wedges
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon harissa
  • Coarse salt


  1. On a rimmed baking sheet, toss squash, olive oil, and 1 harissa. Season with salt. Roast in a 375 degrees oven, turning once, until tender, about 30 minutes.
