Ingredients

  • 2 ounces arugula (about 2 cups)
  • Lemon juice, plus six lemon wedges for serving
  • Extra-virgin olive oil
  • Coarse salt and freshly ground pepper
  • Pepper
  • 4 Breaded Chicken Cutlets
  • 1 1/2 ounces Parmesan shavings (about 1/2 cup)

Directions

  1. Step 1

    Toss arugula with a generous amount of lemon juice, extra-virgin olive oil, coarse salt, and pepper. Top cutlets with salad and Parmesan shavings, and serve with lemon.
