Oven-Baked Jerk Chicken

Technically, jerk chicken should be smoked for hours until falling off the bone. If you have the time, I highly recommend this method (or a trip to Jamaica). If you don't have time for that, give this recipe a try. Chicken rubbed in a paste of chiles, scallions, allspice, and garlic, then cooked in your oven or on your grill, faithfully captures the spirit and flavor of the original in a fraction of the time.
