I bet you use your slow cooker all the time for making great wintery stews and braises, right? Me too! But guess what? It works great for stuffed peppers too! It's so simple, you don't even need to pre-cook the filling. Mix together white beans, uncooked couscous, feta cheese and some seasonings, spoon into peppers, and 4 hours later you have a light fresh meal, straight from the slow cooker!
