Key Lime Pies

As the name suggests, key lime pie originated in the Florida Keys, where the extra-tart fruit is in abundance. The best-known version of key lime pie layers a lime custard between a whipped-cream topping and graham-cracker crust. Key limes have an extra-tart, nuanced flavor, but if you can’t find them, it’s fine to swap in regular limes in most recipes.
