Chocolate Cheesecakes

Each enticing in its own right, chocolate and cheesecake in combination make for an irresistible dessert. There’s the classic, dense New York-style chocolate cheesecake, of course, but you can also play with the flavors -- adding peanut butter or espresso, for instance -- and have fun with the presentation (spider-web chocolate cheesecake, anyone?).

These little cakes resemble molten chocolate cakes, but are actually cheesecakes. The dessert may seem rich, but it's made with nonfat cottage cheese instead of cream cheese. Bake them in a muffin tin and let them set in the fridge before turning out onto plates.

These light cheesecake brownies get their rich taste from reduced-fat cream cheese, reduced-fat sour cream, and unsweetened cocoa powder. To make the cookie crust, after grinding the chocolate wafers in a food processor, spread them evenly in a baking pan lined with two crisscrossed sheets of parchment paper.
