Chicken Soup

Chicken soup, that universal cure-all, is easily tweaked. Start with the basics, and from there, so many variations are possible -- and delicious.

Simmer chicken pieces in water or broth with an onion, some carrots, celery, a bit of parsley, and some salt. When the chicken is cooked through, remove the meat from the bones and set aside to cool. Return the bones to the broth -- this is especially important when starting with water. Simmer until the broth is intense and flavorful. Don’t be impatient; this is what makes great soup. When the meat is cool, tear into bite-size pieces.

Once the broth is ready, you can either strain it or remove the bones and leave the vegetables in. It all depends on how you like your vegetables. Like super-soft, almost-falling-apart veggies? Leave as is. If you prefer them just cooked through, then strain the broth, cut up some of your favorite vegetables, add to the broth, and simmer until just cooked. Stir some or all of the chicken back into the soup and heat through. Garnish with a sprinkling of fresh herbs, such as dill or parsley, or a squeeze of lemon juice.
