Lots of vegetables -- potato, carrot, bell peppers, and mushrooms -- and ground turkey in place of beef make this hash low in fat. Each serving can be topped with an egg. Hash is often served at breakfast or brunch, but this dish also makes an easy dinner.
Eggplant lovers will love this easy version of a Sicilian staple, flavored with parsley, capers, and red peppers. Roasting eggplant, rather than sauteing it in a lot of oil, renders
it terrifically tender and imparts a smoky taste.
Bell peppers have a Southwestern flair when stuffed with rice, black beans, and vegetables such as corn, carrot, and leek. Diced poblano peppers (which, like bells, are members of the Capsicum family) spice up the filling, along with cumin, turmeric, and paprika.
Spread this sauce on our Turkey Sandwich. This recipe makes a generous amount of the sauce, but it also tastes great
with other dishes, such as grilled vegetables, pasta, and seafood (especially shrimp and halibut). If you like, you can freeze it in ice cube trays and transfer the cubes to a separate container for future use.
