Vanilla

This baking superstar has exotic origins: Grown in Madagascar, Indonesia, Mexico, and Tahiti, vanilla is a hand-harvested fruit that blossoms for only a few hours each year. Use whole vanilla beans for the deepest flavor. Vanilla extract works quite well for many purposes too; just be sure to use only vanillas that are labeled "pure," not imitation.

You'll need twelve cream-horn molds or four-inch wooden cake dowels to make these horns. For a delicious alternative, add almond extract, raspberry puree, or mini chocolate chips to the whipped cream.
