Stuffed peppers

For an entree or side that tastes of summer, try stuffed peppers. Go with classic bell pepper, or use smaller, spicier poblanos or even marinated hot cherry peppers for a zesty stuffed pepper twist. We split and seed the peppers, then stuff with cheese, wild rice, beans or vegetables, even polenta.

Bell peppers have a Southwestern flair when stuffed with rice, black beans, and vegetables such as corn, carrot, and leek. Diced poblano peppers (which, like bells, are members of the Capsicum family) spice up the filling, along with cumin, turmeric, and paprika.

You will need to soak the cod for a full day, so plan ahead. Piquillo peppers, spicy-sweet red peppers from northern Spain that have been roasted and peeled, can be found in specialty-food stores and some supermarkets.
