The combination of walnuts, cheese, and refreshing citrus makes this a fine after-dinner palate cleanser. We used honey tangerines, but clementines work just as well; both fruits are members of the mandarin-orange family.
Our ambrosia is composed of fresh fruits available at the height of summer. We tossed nectarines, plums, blackberries, oranges, pineapple, and kiwis in a ginger syrup, then arranged the fruit in coconut bowls. Clouds of amaretto-flavored whipped cream and toasted-coconut shavings are piled on top.
