Gluten-Free Creamy Tomato Soup

it's no secret that I'm a fan of cheese and all of its magical properties. Today I am employing the power of cheese to transform cubes of store-bought polenta into crunchy, irresistible croutons. I'm using them to top a creamy tomato soup, but you could just as easily throw them in with a salad or eat them on their own as a snack (which, by the way, is what I did with all the leftovers after the shoot -- now you know!).
