Activating nuts releases their healthy enzymes. Be sure to start with raw almonds (most are pasteurized -- and far less nutritious). To determine whether they've been pasteurized, soak them for 8 hours. If the peels slip off easily, they're raw. If it takes some effort to remove the skin, they have been pasteurized.

- 1/4 cup raw almonds, sunflower seeds, or pumpkin seeds, rinsed
Soak nuts or seeds in a non-reactive bowl at room temperature until softened: almonds (8 hours), sunflower and pumpkin seeds (4 hours). Rinse.
